Dijon Cilantro Tuna Sandwiches

Ingredients

  • Servings: 6
  • 1/2 cup plain nonfat yogurt
  • 6 tablespoons sweet pickle relish
  • 2 tablespoons dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 (6 ounce) cans tuna in water, drained (i only use tuna)
  • 1 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup cilantro, chopped
  • 12 slices whole grain bread, toasted
  • 12 slices tomatoes
  • lettuce leaf

Recipe

  • 1 in a bowl mix first 4 ingredients (yogurt - mustards); stir in tuna.
  • 2 stir in veggies (celery - cilantr).
  • 3 cover and chill for 30 minutes.
  • 4 spoon 1/2 cup tuna on 6 toasted bread slices, top with tomatoe slices and lettuce and the rest of the bread slices.
  • 5 cut sandwiches in half, if desired.
