Frozen Peanut Butter And Jelly Sandwich

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 1
  • 2 slices whole grain wheat bread
  • 1 tablespoon butter, soften (not melted)
  • 2 tablespoons peanut butter
  • 2 teaspoons jelly (can use honey)

Recipe

  • 1 spread soften butter over inside of each bread slice. cover to edges. this does not have to be thick.
  • 2 spread peanut butter over the butter but not all the way to the edge.
  • 3 spread jelly over the peanut butter.
  • 4 close sandwich. do not cut!
  • 5 place into a sandwich bag. close, place flat in freezer.
  • 6 when frozen, (about one hour) remove from freezer, open small part of bag and squeeze out air. reseal.
  • 7 place sandwich bag in a freezer bag, squeeze out air and return to freezer.
  • 8 these sandwiches can remain frozen for some time. i have had then after four month and they tasted as good as freshly made.
  • 9 my students usually make ten at a time. they pop them in their bags and it is defrosted by lunchtime!

Pesto Burgers

Total Time: 55 mins Preparation Time: 45 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb ground chuck
  • 1/4 cup dry italian seasoned breadcrumbs
  • 1 tablespoon dried oregano
  • 2 tablespoons finely chopped red bell peppers
  • sea salt, to taste
  • pepper, to taste
  • 8 buns or 8 sliced italian bread
  • 2 cups fresh basil leaves (stems discarded)
  • 3/4 cup pine nuts
  • 3/4 cup fresh grated parmesan cheese
  • 2 cloves garlic
  • sea salt, to taste
  • pepper
  • 1 1/4 cups extra virgin olive oil

Recipe

  • 1 to make the pesto: add the basil leaves, pine nuts, cheese, garlic, salt and pepper to the container of a food processor.
  • 2 while slowly adding the olive oil through the chute, pulse the processor on and off for 30 seconds.
  • 3 with the processor off, take a rubber spatula and scrape down the sides; replace the lid and pulse for approximately 10 more seconds or until the pesto is well blended.
  • 4 to make the burgers: in a mixing bowl (using your hands or a wooden spoon) combine the ground beef, 1/2 cup pesto, breadcrumbs, oregano, and red pepper; ingredients should be well distributed.
  • 5 shape mixture into 4 patties; season lightly with salt and pepper if desired.
  • 6 place patties on a grill over medium-high heat; grill for 5 minutes on one side, turn pattties over and grill for about 5 more minutes or until cooked through.
  • 7 thinly spread pesto on the cut sides of toasted buns or italian bread.
  • 8 you may drizzle additional pesto over the burgers, then serve on toasted buns/bread.

Low-fat Grilled Portobello Sandwich

  • 1 (4 ounce) portabella mushrooms
  • 1/3 cup light herb vinaigrette dressing
  • 1/2 large red bell pepper, sliced
  • 1 clove garlic, minced
  • 1 tablespoon fat-free mayonnaise
  • 1 onion roll
  • 1 slice reduced-fat monterey jack cheese

Recipe

  • 1 marinate mushroom in the vinaigrette dressing in a zip-lock bag in the fridge for 2 hours.
  • 2 remove mushroom from the marinade and grill or cook it in a non-stick skillet with the bell pepper for 5 minutes on each side.
  • 3 mix the garlic and mayonnaise together and spread on the roll halves.
  • 4 top with the mushroom and cheese.

Low-fat Hawaiian Toastie

  • 2 slices bread
  • 1 tablespoon mayonnaise
  • 1 slice ham
  • 25 g pineapple
  • 25 g cheese

Recipe

  • 1 brush the sandwich toaster with a little sunflower oil, wiping off the excess with kitchen paper. preheat the sandwich toaster to its highest setting.
  • 2 spread the mayonnaise on one slice of bread and cover with the ham, pineapple, and cheese. cover with the second slice of bread. place the sandwich carefully in the toaster, close the lid, and cook for 4 minutes until browned.

Hummus, Artichoke, And Tomato Pita Sandwich

Ingredients

  • 2 pita bread (flatbread rounds, without the pocket)
  • 1/4 cup hummus
  • snipped green onion (to taste)
  • 1/2 cup canned water-packed artichoke hearts (not marinated kind)
  • 1 ripe tomato, sliced
  • 2 slices gruyere cheese

Recipe

  • 1 toast pita bread rounds (i just place them in my toaster over, two at a time).
  • 2 spread 2 tbsp hummus on two of the toasted pitas.
  • 3 sprinkle snipped green onions over hummus
  • 4 divide drained artichokes and tomato slices and layer them on the pitas.
  • 5 place 1 slice of gruyere on each
  • 6 for cold sandwich, place remaining pitas on top of each and serve.
  • 7 for warm sandwich, put the layered pita back in oven/toaster oven until cheese is melted. place remaining 2 pitas on top and serve.

Hung Shao Lamb

Ingredients

  • Servings: 1
  • 1 lb lean belly lamb strips, chopped into postage stamp sized squares if you like but it's not really necessary. (other cheap cuts of lamb are also good; try the hock. and leave the skin on; it goes gelatinous and)
  • 4 tablespoons light soy sauce
  • 2 tablespoons tamari
  • to taste oyster sauce, one big splodge
  • 1 inch fresh gingerroot, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 cinnamon stick
  • 2 star anise
  • 1 teaspoon szechuan peppercorns, dry fried
  • 2 tablespoons sugar
  • 1/2 cup sherry wine (optional)
  • 1 pinch msg (if, like me, you have no shame. just please don't mention this to my mother.) (optional)

Recipe

  • 1 stir-fry ginger and garlic in a big casserole dish.
  • 2 place lamb in, skin down.
  • 3 (pluck it with tweezers first if it bears an unhealthy resemblance to your husband's back). add everything else and a couple of cups of water.
  • 4 cover and simmer over a very low heat for an hour.
  • 5 turn the lamb over.
  • 6 simmer again for an hour.
  • 7 fish the meat out and put it in a bowl.
  • 8 reduce sauce a bit, taste, and add more soy/oyster sauce if you think it's needed.

Hummus-topped Pitas

Ingredients

  • 15 ounces garbanzo beans, drained
  • 3 tablespoons lemon juice
  • 3 dashes hot pepper sauce
  • 1/4 cup onion, chopped
  • 1 garlic clove, minced
  • 2 teaspoons cooking oil
  • 1/2 cup sesame seeds, toasted
  • 1/4 cup tahini paste (sesame seed paste)
  • 1/4 cup green pepper, chopped
  • 4 pita bread rounds (small)
  • 1 1/2 cups lettuce, shredded
  • 1 1/2 cups feta cheese, crumbled
  • 1 medium tomato, chopped
  • 1/2 cup ripe olives, drained and sliced

Recipe

  • 1 preheat oven to 350.
  • 2 drain beans, reserving 3 tablespoons liquid.
  • 3 place beans, liquid, lemon juice, and pepper sauce in a blender container or food processor. cover and blend or process until pureed.
  • 4 cook onion and garlic in oil until tender.
  • 5 stir together the bean mixture, onion mixture, sesame seed, tahini, and green pepper.
  • 6 split pita rounds horizontally and bake 5 minutes.
  • 7 top with lettuce and 1/2 cup bean mixture.
  • 8 add cheese, tomato, and olives.

Lamb Loin Sandwich Meat

Total Time: 7 hrs 10 mins Preparation Time: 10 mins Cook Time: 7 hrs

Ingredients

  • 2 1/4 lbs lamb loin
  • 1 tablespoon canola oil
  • 1 cup water
  • 4 tablespoons honey
  • 2 tablespoons whole grain mustard
  • 1 ounce garlic (minced)
  • 1 teaspoon salt
  • black pepper, 20 grinds
  • 6 ounces tomatoes (diced, about 1 medium tomato)

Recipe

  • 1 heat your oven to 225 degrees fahrenheit.
  • 2 on a large sheet of aluminum foil, shiny side up, place the lamb loin. rub it with the canola oil and crimp the sides to make a bowl all around it making certain to leave enough foil to close over the roast.
  • 3 pour the water into the aluminum foil pouch.
  • 4 rub the honey and mustard over the top of the lamb. add the minced garlic, salt, and pepper.
  • 5 pour the diced tomatoes over the top.
  • 6 seal the aluminum foil pouch around the roast and place it on a roasting sheet or in a pan to catch any juices that might escape. place it in the oven and roast it for 6 hours.
  • 7 remove the lamb from the foil pouch, saving the juices and tomato bits in another dish, and cool the meat to room temperature. note: the finished lamb will not have much color as it was not seared or browned before the long, slow cooking process.
  • 8 in a skillet, cook the juices and tomatoes over a medium heat until reduced to a glaze. pour this glaze over the lamb roast and place in the refrigerator.
  • 9 shred or slice the lamb into very small pieces for use on sandwiches, in omelets, or other applications.

Morning Breakfast Panini

Ingredients

  • Servings: 1
  • 2 slices bread or 2 slices brioche bread, 1/2-inch thick
  • unsalted butter (melted for brushing)
  • 3 tablespoons cheddar cheese, grated
  • 2 slices cooked bacon, fried until crispy
  • 1 egg, fried
  • salt & freshly ground black pepper, to taste
  • 1/4 cup arugula

Recipe

  • 1 preheat an electric panini maker on high heat according to the manufacturer's instructions.
  • 2 place the bread slices on a cutting board. brush one side of each slice with melted butter.
  • 3 turn one slice over and sprinkle with the cheese.
  • 4 top with the bacon and fried egg, and season with salt and pepper.
  • 5 top with the arugula and the other bread slice, buttered side up.
  • 6 place the sandwich on the preheated panini maker and cook according to the manufacturer’s instructions until the bread is golden and the cheese is melted, 3 to 5 minutes.
  • 7 transfer the sandwich to a cutting board and cut in half.
  • 8 serve immediately.
  • 9 serves 1.

Lickety-split Deviled Ham

  • 1 1/2 cups cooked smoked ham (or fat free smoked turkey ham)
  • 1/3 cup chicken broth
  • 1 tablespoon dijon mustard
  • 1/4 cup onion

Recipe

  • 1 add ingredients in the order they appear to a blender and put on lid.
  • 2 pulse 5 or 6 times, pause and let the ingredients settle, then quickly pulse again until you've reached a good consistency.
  • 3 then serve.

Cucumber-salmon Sandwiches With Dill

Total Time: 35 mins Preparation Time: 25 mins Cook Time: 10 mins

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1 small cucumber, seeded, peeled, and diced
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper (cayenne)
  • 12 miniature bagels, split (24 miniature rye bread slices may be substituted for bagels)
  • 6 ounces smoked salmon, thinly sliced

Recipe

  • 1 process cream cheese and next 5 ingredients in a food processor until combined, stopping to scrape down sides. cover cream cheese mixture, and chill 1 hour.
  • 2 place split bagels on a lightly greased baking sheet.
  • 3 bake at 350 degrees fahrenheit for 10 minutes or until bagels (or rye bread slices) are toasted.
  • 4 spread cucumber mixture on cut side of each bagel half, and top each portion with smoked salmon.

Onion Burgers By John T. Edge - The Longmeadow Farm

Ingredients

  • Servings: 4
  • 1 lb ground chuck
  • 2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
  • 2 tablespoons pimento cheese (or cheddar, american, provolone cheese)
  • 6 buns, split
  • mustard

Recipe

  • 1 place a heavy skillet over medium-high heat. leave it there for 5 minutes.
  • 2 loosely gather a handful of ground beef (free form) and slip it into the pan. (can make 4 or 6 patties depending on size).
  • 3 with the side of a spatula, push the burgers into a semblance of a round.
  • 4 after about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat.
  • 5 cook another minute and then flip. season with salt. smash the burgers again, hard.

  • 2 dill pickles (sliced down the length, i usually get about 4 slices per pickle)

  • 1 cut bun, and spread peanut butter on each half.

  • 3 add pickle slices.
  • 4 eat away!
  • 5 don't be shy to try this with different breads.
  • 6 can also be toasted.

Oh-so-good Chocolate Ganache Sandwiches

Ingredients

  • 1 (12 ounce) bag semi-sweet chocolate chips
  • 2 cups heavy cream
  • 2 (9 ounce) boxes nabisco famous chocolate wafers

Recipe

  • 1 melt the chocolate chips in the heavy cream over low heat, stirring occasionally until blended. remove from heat and chill in the refrigerator until cool but not firm.
  • 2 beat the chocolate cream with an electric mixer until light and fluffy, 3 to 5 minutes.
  • 3 assemble the sandwiches with 2 chocolate wafers and a few tablespoons of ganache.

Margarita Ice Cream Sandwiches

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 5 teaspoons grated lime rind, divided
  • 2 tablespoons fresh lime juice
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon table salt
  • 1 teaspoon turbinado sugar
  • 1/2 teaspoon couse sea salt
  • 2 cups reduced-fat vanilla ice cream, softened
  • 2 cups lime sherbet, softened

Recipe

  • 1 place butter, and sugar in a large bowl, and beat with a mixer at medium speed for 5 minutes or until light and fluffy.
  • 2 add egg, 1 tablespoon lime rind, and limejuice, and beat 2 minutes or until well combined.
  • 3 weigh or lightly spoon flour into dry measuring cups, and level with a knife.
  • 4 combine flour, bsking powder, and 1/8 teaspoon table salt, and stir with a whisk.
  • 5 add flour mixture to butter mixture, and beat just until combined.
  • 6 divide dough into 2 equal portions, and shape each portion into a 6 inch log.
  • 7 wrap logs individually in plastic wrap, and chill 3 hours or until firm.
  • 8 preheat oven to 350 degrees.
  • 9 cut each log into 16 (1/3 inch slices) and place one inch apart on baking sheets lined with parchment paper.
  • 10 sprinkle the cookies evenly with remaining 2 teaspoons lime rind, turbinado sugar, and sea salt.
  • 11 bake 350 degrees for 10 minutes or until edges are lightly browned.
  • 12 cool 2 minutes on pans on a wire rack.
  • 13 remove from baking sheets, and cool completely on wire racks.
  • 14 place vanilla ice cream and sherbet in a medium bowl, and lightly fold and swirl together.

  • 16 cover each sandwich with plastic wrap.
  • 17 freeze for 4 hours or until firm.

Onion Dip (raw Vegan)

Ingredients

  • 2 cups macadamia nuts, soaked
  • 3/4-1 cup water
  • 1 teaspoon sea salt
  • 1 garlic clove, minced
  • 1 cup onion, diced
  • chives (optional)

Recipe

  • 1 blend macadamia nuts, 3/4 cup water, sea salt, and garlic until smooth and creamy. if needed add more water so it blends. thicker is better but it should still be completely blended.
  • 2 place in bowl and fold in onions, mix gently, and chill. top with chives if using. enjoy with veggies, crackers, or as a spread on sandwiches!

Hard Boiled Egg And Peppers Pitas

Ingredients

  • Servings: 1
  • 1 -2 hard-boiled egg, sliced
  • 1/2 red peppers, yellow pepper or 1/2 green pepper, sliced into strips
  • 1 teaspoon mayonnaise or 1 teaspoon olive oil
  • 1 teaspoon pickle relish (sweet or dill)
  • black pepper, cayenne pepper or hot sauce
  • salt (optional)
  • 1 pita bread round (i use whole-grain pita)

Recipe

  • 1 remove yolks from egg slices, cream together with mayo or olive oil, relish, pepper or hot sauce, and salt.
  • 2 microwave pita bread for about 10 seconds. slice warm round in half and gently pry open the pocket. spread the yolk and mayo mixture inside the pocket.
  • 3 arrange egg slices and pepper strips inside the pocket. plate up and enjoy.

Odie's Pimento Cheese Spread

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/2 teaspoon salt
  • 1/8 cup flour
  • 1 dash pepper
  • 12 ounces sharp cheddar cheese
  • 1 (4 ounce) jar pimientos (pimentos)

Recipe

  • 1 chop 1 pound sharp cheddar cheese in very small pieces.
  • 2 add 1 (4 ounce) jar of pimentos.
  • 3 chop all in meat grinder.
  • 4 pour dressing over cheese, mix well, and refrigerate for a few hours.
  • 5 to make dressing:.
  • 6 lightly beat the egg.
  • 7 mix egg, milk, sugar, vinegar, salt, flour, and pepper in a saucepan.
  • 8 cook on low, stirring with a whisk until well blended and thickened.
  • 9 note that the online editor insists on spelling it pimientos in the ingredient list which is why i typed "pimentos" in parenthesis above.

French Onion Sandwiches

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter or 2 tablespoons oleo
  • 4 (4 ounce) cube steaks
  • 1 medium onion, sliced and separated into rings
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 2 teaspoons worcestershire sauce
  • 1/8 teaspoon garlic powder
  • 1 dash pepper
  • 4 slices french bread, 1 inch thick (toasted)
  • swiss cheese, chess cut in half

Recipe

  • 1 in a large skillet, melt butter or oleo. add steaks and cook over medium high heat for 2-3 minutes on each side or till done. remove from skillet, reserving the drippings. cook the onion in the drippings until tender. combine the broth, cornstarch, worcestershire sauce, garlic powder, and a dash of pepper. add to skillet. cook until bubbly. cook and stir 2 minutes more. place on toasted bread top with swiss and onion mixture.

Lamb Flat Bread Or Pitas With Avocado Tzatziki

Ingredients

  • Servings: 6
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon chili powder
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 lbs boneless lamb
  • 2 cups plain yogurt
  • 1/4 cup olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 cup grated cucumber
  • 1 avocado
  • 6 flat bread or 6 pita bread
  • 3 cups shredded lettuce

Recipe

  • 1 combine all of marinade ingredients.
  • 2 cut the lamb into thin medallions or strips.
  • 3 marinade the lamb in the refrigerator overnight or at least 1 hour.
  • 4 drain the marinade and grill the lamb on outdoor barbeque.
  • 5 strain the yogurt in cheesecloth or fine wire colander for 30 minutes. (straining the yogurt and disgarding the liquid will make it thicker, but you can skip this step).
  • 6 in a medium bowl stir together the yogurt, olive oil, lemon juice, garlic and salt.
  • 7 peel, remove seeds and grate the cucumber. squeeze to remove excess liquid. add to yogurt mixture.
  • 8 add peeled, diced avocado.
  • 9 refrigerate for a least 1 hour.
  • 10 to serve place shredded lettuce on pita or flatbread, top with grilled lamb and serve with tzatziki sauce.
  • 11 you may also serve with diced or grilled tomatoes, green onion or any other vegetables you might like.

Pesto And Mozzarella Sandwiches

  • 1 loaf french bread, sliced
  • 4 tablespoons jarred pesto sauce
  • 1 cooked chicken breast, shredded
  • 4 ounces fresh mozzarella cheese, sliced

  • 1 spread pesto onto bread and top with chicken and cheese. broil for 3 minutes or until cheese is melted.

Avocado Tea Sandwiches

  • 1/2 teaspoon lemon juice

  • 12 thin slices english cucumbers

Recipe

  • 1 combine mayonnaise, lemon juice and pepper in a small bowl.
  • 2 thinly spread on bread and top with salmon, avocado and cucumber.
  • 3 serve with your favorite tea beverage.

French Market Sandwiches

Ingredients

  • Servings: 12
  • 3/4 cup butter or 3/4 cup margarine
  • 1/4 cup creole mustard
  • 1/2 teaspoon poppy seed
  • 12 plain croissants, split
  • 2 lbs deli ham, thinly sliced
  • 12 slices swiss cheese

Recipe

  • 1 stir together first 3 ingredients in a small bowl.
  • 2 spread on cut sides of croissants.
  • 3 top bottom halves evenly with ham and cheese.
  • 4 top with remaining croissant halves.
  • 5 place sandwiches on baking sheets.
  • 6 bake at 325 degrees for 12-15 minutes or until cheese melts.

Avocado Sandwiches

Ingredients

  • 1 lb sliced bacon, halved
  • 2 medium ripe avocados, peeled
  • salt and pepper, to taste
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 8 slices whole wheat bread, toasted

Recipe

  • 1 cook bacon until crisp, drain on paper towels.
  • 2 gently toss avocados with salt and pepper.
  • 3 combine mayonnaise and lemon juice and spread over toast.
  • 4 top with avocado and bacon and serve immediately.

Grilled Zucchini Sandwich

Ingredients

  • 2 large onions, thinly sliced

  • 1 1/2-2 lbs sliced deli roast beef or 1 1/2-2 lbs italian roast beef
  • 4 -6 steak rolls

  • 1 preheat oven to 400ºf.
  • 2 cut about a quarter of an inch off the top of the garlic head and place it onto a square of aluminum foil. drizzle with about 1 tablespoon extra virgin olive oil and close the foil up around the garlic. transfer to the oven and roast until golden brown and tender, about 40 minutes. remove from the oven and let cool.
  • 3 while the garlic is roasting, place a large skillet over medium heat with 1 turn of the pan of olive oil, about 1 tablespoon, and the butter. add the onions, bay leaf and thyme to the pan and cook gently until the onions are well caramelized, about 30 minutes. season with salt and pepper, and reserve.

  • 2 1 gallon size zip lock bag.
  • 3 4 12" pieces of heavy foil.
  • 4 grill of choice: portable gas, or fire pit with wood or charcoal, starter fluid and flame source.

  • 6 pre slice all vegetables at home, then place the vegetables in zip lock bag with 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon light brown sugar, 1 sprig rosemary, all of the fresh thyme leaves, a pinch each of salt and fresh ground pepper. best done the day before and store in fridge to marinate overnight.
  • 7 toast the thick crusty bread slices on all sides in 2 tablespoon olive oil in a heavy cast iron skillet, let cool on paper towels, then wrap 2 slices each in separate sheets of foil. this is best to do the day of use.
  • 8 prepare your outdoor grill to a medium heat for gas, for sand pit grill wood should be glowing but not flaming, charcoals grilling coals should be glowing not flaming.
  • 9 fold the 2 remaining sheets of tin foil into pouches, then divide the vegetables evenly between the two pouches, discarding the rosemary sprig and any extra liquid. crimp the foil pouches shut and place them on your grill or directly on the pit embers. cook for 5 minutes, check to make sure vegetables are not scorching, then continue to cook until tender and golden about 10-15 minutes.
  • 10 unfold the toasted bread foil packs, divide all of the mozzarella cheese evenly between both packs covering 1 slice of the toast only in each pack. place 2 basil leaves on each of the cheese covered toast slices. when vegetables are done, pour the contents of each on the cheese covered slices. top with the remaining toast and reseal the toast foil packs. place the foil packs back to the grill and grill for 3-5 minutes or just until the cheese is melted. enjoy!

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 yellow onions
  • salt and pepper
  • 1 tablespoon dry sherry
  • 1/2 teaspoon finely chopped fresh thyme
  • 8 slices american cheese
  • 1 loaf of sliced sourdough bread
  • butter, to butter the bread slices

Recipe

  • 1 melt 1 t butter with 1 t olive oil in a heavy bottomed pot over medium high heat.
  • 2 slice yellow onions 1/4" thick from root to tip and add to pot.
  • 3 add salt and pepper.
  • 4 spread onions in an even layer.
  • 5 cover and turn heat to medium low.
  • 6 sweat onions for 10 or 15 minutes.
  • 7 uncover onions and cook until carmalized, 25 or 30 minutes while stirring frequently.
  • 8 add sherry and scrape up bits on bottom of the pan.
  • 9 stir in fresh thyme and salt and pepper.
  • 10 preheat a griddle on medium heat.

Natasha's Tomato, Avocado, Basil Salad

  • 3 -4 vine ripened tomatoes
  • 8 -12 ounces fresh mozzarella cheese
  • 2 ripe avocados
  • 1/2-1 small red onion (optional)
  • 12 -16 fresh basil leaves
  • kosher salt or sea salt, to taste to taste
  • fresh ground black pepper
  • 1 cup packed fresh basil leaf
  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons mayonnaise
  • 2 tablespoons balsamic vinegar (i use balsamic because it helps keep the color of the dressing vibrant, but the regular balsam)
  • 2 tablespoons chopped shallots or 2 tablespoons finely chopped onions
  • 3/4 teaspoon kosher salt or 3/4 teaspoon sea salt
  • fresh ground black pepper

Recipe

  • 1 slice tomatoes into medium sized slices.
  • 2 slice mozzarella into medium sized slices (not too thin or too thick).
  • 3 cut avocados in half lengthwise, remove and discard pits, slice diagonally into medium sized slices, trying to keep them as the same size as the tomatoes and mozzarella slices.
  • 4 slice red onion very thinly sliced (if using).
  • 5 on medium sized plate or platter, arrange tomatoes, avocados, onions, and mozzarella, shingle style - filling the outer rim of plate and working your way into the middle. fit in a basil leaf on top of the mozzarella slices.
  • 6 lightly salt and sprinkle black pepper over the top to taste.
  • 7 drizzle with fresh basil dressing to taste. note that all of the dressing is not meant to be used. reserve remainder for other use. (great on sandwiches, salads, topping for some soups, etc.).

  • 1 preheat the oven to 375 degrees f.
  • 2 in a large bowl, stir together the bread crumbs, parsley, eggs, milk, cheese, sun-dried tomatoes, salt, and pepper. add the turkey and gently stir to combine, being careful not to overwork the meat.
  • 3 on a baking sheet lined with parchment paper, lay out the pancetta, overlapping the slices, into a large rectangle shape. in the middle of the rectangle, place the turkey mixture, shaping into a loaf. using the parchment paper, wrap the pancetta up and around the turkey loaf to cover completely. squeeze the parchment-covered loaf with your hands to secure the pancetta and solidify the shape of the loaf. while still covered in parchment, bake the loaf until the internal temperature reaches 165 degrees f on an instant-read thermometer, about 45 minutes. remove from the oven and let cool.
  • 4 in a blender, combine the arugula and the mayonnaise and process until smooth. store in the refrigerator until ready to serve.
  • 5 to make the sandwiches, slice the rolls and spread with the arugula mayonnaise. slice the turkey meatloaf and place on the rolls to make sandwiches.

Grecian Chicken Gyros

  • 2 tablespoons tbsps lemon juice

  • extra virgin olive oil, to tast preference

  • 1 preheat your oven or toaster oven to 380 degrees f.
  • 2 in a large mixing bowl combine oregano, onion powder, and lemon juice and 2 tbl spoons of olive oil with the chicken.
  • 3 on a greased cookie sheet, flatten out the chicken into a thin uniform slab.
  • 4 sprinkle on sea salt, black pepper, and just a dash of season salt.
  • 5 pour on a little bit of olive oil, about a tbl. spoon and add to oven.
  • 6 bake for 7 minutes and turn. before adding back to heat, sprinkle pepper and seasoning salt and about a tbl. spoon of olive oil.
  • 7 during cooking time you may add fresh squeezed lemon once or twice to each side.
  • 8 once this is done, about 14 minutes, you may remove and slice!
  • 9 i serve this with whole wheat pita bread and cucumber mint sauce to make sandwiches.

Sauteed Mushroom Butter And Bacon Tea Sandwiches

Ingredients

  • 1 cup unsalted butter, softened
  • 1 tablespoon olive oil
  • 1 lb shiitake mushrooms, cleaned, tough ends of stems removed, diced (we use buttons, personal preference) or 1 lb button mushrooms (we use buttons, personal preference) or 1 lb cremini mushroom (we use buttons, personal preference)
  • coarse salt
  • fresh ground black pepper
  • 1/4 cup madeira wine or 1/4 cup sherry wine
  • 24 slices whole wheat bread
  • 1 1/2 lbs about 24 slices bacon, cooked
  • 1 bunch arugula, cleaned and trimmed

Recipe

  • 1 in a large skillet over medium heat, heat 2 tablespoons butter and the oil.
  • 2 add mushrooms, and season with salt and pepper; saute until mushrooms begin to soften and juices evaporate, about 8 minutes.
  • 3 add madeira, and remove from heat; deglaze pan, stirring with a wooden spoon until liquid has evaporated.
  • 4 let cool, and place in the bowl of a food processor fitted with the metal blade.
  • 5 add remaining butter; pulse until mushrooms are finely chopped, about 1 minute.
  • 6 thinly spread two slices of bread with mushroom butter; cover one slice with a single layer each of bacon and arugula, and top with other bread slice.
  • 7 use a serrated knife to trim crusts and cut in half diagonally into two triangles.
  • 8 cover with damp paper towels until ready to serve.
  • 9 repeat with remaining ingredients.

Pesto Focaccia Sandwich

  • 1 large focaccia bread or 1 large ciabatta, loaf
  • 1 (3 1/2 ounce) jar pesto sauce
  • 1/2 lb ham, thinly sliced
  • 1/2 lb turkey, thinly sliced
  • 6 slices provolone cheese
  • 1/2 small red onion, thinly sliced

Recipe

  • 1 preheat oven to 450º.
  • 2 cut bread in half horizontally using a serrated knife.
  • 3 spread pesto evenly over the cut sides.
  • 4 layer ham, turkey, cheese and onion evenly over the bottom half of the loaf, the top with the other half.
  • 5 wrap in aluminum foil and bake for 10 minute.

  • 1 (8 ounce) can pillsbury refrigerated crescent dinner rolls
  • 1/3 cup light cream cheese with roasted garlic
  • 1/4 cup purchased pesto sauce
  • 1 tablespoon jalapenos or 1 tablespoon hot pepper jelly
  • 1/2 cup italian style breadcrumbs
  • 2 cups cubed cooked chicken
  • 3 tablespoons crumbled feta cheese
  • 1 -2 tablespoon water

Recipe

  • 1 heat oven to 375°f
  • 2 separate dough into 4 rectangles.
  • 3 firmly press perforations to seal.
  • 4 cut each rectangle in half crosswise to make 8 pieces; press each to form 4-inch square.
  • 5 in medium bowl, combine cream cheese, pesto, jelly and 2 tablespoons of the bread crumbs; mix well.
  • 6 stir in chicken and cheese.
  • 7 place 1/4 cup chicken mixture in center of each square.
  • 8 bring 4 corners of each square up over filling; twist firmly to seal.
  • 9 brush top and bottom of each bundle with water; coat with remaining bread crumbs.
  • 10 place on ungreased cookie sheet.
  • 11 bake at 375°f for 14 to 22 minutes or until deep golden brown: serve warm.

Bloody Hand Sandwiches

  • 3 (8 ounce) cans refrigerated crescent dinner rolls
  • 2 (16 ounce) packages hot dogs, sliced in half the long way
  • 1/2 cup ketchup (to taste)

Recipe

  • 1 preheat oven to 375°f (190°c). line a baking sheet with parchment paper.
  • 2 on a floured surface, roll out each tube of crescent dough into a large square about 1/4-inch thick. place your hand or a hand shape cut our of paper onto the dough, and cut two hand shapes out of each tube of dough. roll up the uncut dough, roll out again, and cut two more hand shapes (total of 8 shapes).
  • 3 to assemble, lay four hand shapes onto the prepared baking sheet. place two hot dog halves in a line, cut sides down, onto each finger and thumb. the hot dog halves should reach 1/4-inch from the tip of each finger into the hand. lay a second dough over the first one, covering the hot dogs, and pinch the two hand shapes together to enclose the hot dogs.
  • 4 bake in the preheated oven until the hands are golden brown, about 20 minutes. allow to cool slightly; remove to a platter. decorate the stumps of the wrist with ketchip "blood" to serve.
  • 5 cook's note: if you're using an adult-size hand, each piece can be cut up and serve. you can cut out small hands so you don't have to cut then up when served.

  • 1 preheat your oven to 425 f (220 c ); place oven rack in the center of the oven.
  • 2 line a baking dish (15x10-inch)(38x25cm) with parchment paper, letting sheet of paper go beyond each of the edges.
  • 3 oil the sheet and the sides of the dish.
  • 4 spread the slices of bacon on the cooking plate.
  • 5 bake in oven for 12 to 14 minutes or until they are golden color and crisp.
  • 6 drain excess on a paper towel; set aside.

  • 1 (4 -5 lb) boneless lamb shoulder, cut in half

  • 2 (7/8 ounce) envelopes lamb gravy mix
  • 2 cups water
  • 1/4 cup vinegar
  • 2 bay leaves
  • 1 medium onion, thinly sliced
  • 8 small french rolls

Recipe

  • 1 sprinkle roast evenly with garlic pepper and salt. brown in hot oil in large skillet for 2 minutes on each side or until lightly browned. place in a 6-qt slow cooker, fat sides up.
  • 2 combine mojo criollo, lamb gravy mix, water, and bay leaves; pour over roast. top with sliced onion.
  • 3 cover and cook on high 1 hour.
  • 4 reduce heat to low and cook 4-5 hours or until meat is tender and shreds easily. discard bay leaves.
  • 5 leave the liquid and onions in the crockpot and remove the lamb to a large bowl. shred the lamb with two forks. add 1 cup reserved liquid to moisten the shredded meat.
  • 6 slice mini french rolls in half. place shredded lamb and onion slices on bottom bread halves and top with the remaining halves.
  • 7 spoon remaining reserved liquid into individual bowls for dipping.
