Hummus, Artichoke, And Tomato Pita Sandwich

Ingredients
- 2 pita bread (flatbread rounds, without the pocket)
- 1/4 cup hummus
- snipped green onion (to taste)
- 1/2 cup canned water-packed artichoke hearts (not marinated kind)
- 1 ripe tomato, sliced
- 2 slices gruyere cheese
Recipe
- 1 toast pita bread rounds (i just place them in my toaster over, two at a time).
- 2 spread 2 tbsp hummus on two of the toasted pitas.
- 3 sprinkle snipped green onions over hummus
- 4 divide drained artichokes and tomato slices and layer them on the pitas.
- 5 place 1 slice of gruyere on each
- 6 for cold sandwich, place remaining pitas on top of each and serve.
- 7 for warm sandwich, put the layered pita back in oven/toaster oven until cheese is melted. place remaining 2 pitas on top and serve.
