Onion Carrot Cashew Sandwich

Ingredients
- 1/4 cup carrot
- 1/2 cup onion
- 1/2 teaspoon minced garlic
- 1 tablespoon olive oil
- 10 cashews
- 1 slice of whole wheat sandwich bread
- ranch dressing
Recipe
- 1 julienne the carrots and chop the onions.
- 2 put olive oil on a frying pan and turn the heat to medium high.
- 3 drop the carrots and onions into the pan.
- 4 cook them, occasionally stirring, for about a minute or until the onions are almost transparent.
- 5 add the garlic and stir it in with a spatula.
- 6 cook 20 seconds.
- 7 pour the vegetables over the piece of untoasted bread.
- 8 grab a handful of paper towels and wipe the remaining garlic bits and oil loosely out of the pan (since it is hot, be careful).
- 9 put the heat to high and add the cashews to the pan.
- 10 toast them for about 30 seconds, tossing once.
- 11 turn the heat off and pour the cashews ontop of the open faced sandwich.
- 12 drizzle a tablespoon or two of ranch dressing over the top.
- 13 fold the sandwich as best as you can and eat up.
