Onion Carrot Cashew Sandwich

Total Time: 5 mins Preparation Time: 2 mins Cook Time: 3 mins

Ingredients

  • 1/4 cup carrot
  • 1/2 cup onion
  • 1/2 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 10 cashews
  • 1 slice of whole wheat sandwich bread
  • ranch dressing

Recipe

  • 1 julienne the carrots and chop the onions.
  • 2 put olive oil on a frying pan and turn the heat to medium high.
  • 3 drop the carrots and onions into the pan.
  • 4 cook them, occasionally stirring, for about a minute or until the onions are almost transparent.
  • 5 add the garlic and stir it in with a spatula.
  • 6 cook 20 seconds.
  • 7 pour the vegetables over the piece of untoasted bread.
  • 8 grab a handful of paper towels and wipe the remaining garlic bits and oil loosely out of the pan (since it is hot, be careful).
  • 9 put the heat to high and add the cashews to the pan.
  • 10 toast them for about 30 seconds, tossing once.
  • 11 turn the heat off and pour the cashews ontop of the open faced sandwich.
  • 12 drizzle a tablespoon or two of ranch dressing over the top.
  • 13 fold the sandwich as best as you can and eat up.
