Pesto & Havarti Grilled Eggplant Burgers

Ingredients
- 1 eggplant
- 1/4 cup olive oil
- 2 cups havarti cheese, shredded
- 1/4 cup pesto sauce
- sandwich bread, of your choice
Recipe
- 1 cut the eggplant into hamburger-sized pieces.
- 2 brush each piece, front and back, with olive oil.
- 3 shred the havarti cheese.
- 4 grill the eggplant until almost done.
- 5 sprinkle the shredded havarti cheese on each eggplant.
- 6 remove the eggplant when the cheese is melted.
- 7 spread the pesto on each eggplant.
- 8 serve on the bread of your choice.
