Jamaican Beef Patties

Total Time: 1 hr 25 mins Preparation Time: 1 hr Cook Time: 25 mins

Ingredients

  • 1 -3 teaspoon cooking oil
  • 2 stalks scallions, finely chopped
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 tablespoons thyme
  • 1 habanero, finely chopped
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 2 teaspoons ketchup
  • 1 teaspoon paprika
  • 3/4-1 1/2 cup water
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons curry powder
  • 1 cup butter or 1 cup shortening
  • 3/4 cup ice water
  • 1 tablespoon vinegar
  • 2 egg yolks
  • 1 egg, beaten

Recipe

  • 2 combine flour, salt, and curry powder in work bowl of food processor, pulse to combine.
  • 3 add butter or shortening and process until mixture looks like fine crumbs.
  • 4 in a bowl combine water, vinegar, and egg yolks.
  • 5 add wet mixture to work bowl and pulse until a ball forms.
  • 6 cover dough in plastic wrap and let rest in refrigerator for 1/2 hour.

  • 8 preheat oven to 350 degrees.
  • 9 mix together meat, scallions, salt, onion and 1 tablespoon of thyme.
  • 10 place in the frying pan with a teaspoon of cooking oil and cook over medium heat until meat is cooked, about 10 minutes.

  • 12 add in breadcrumbs, the rest of the thyme, black pepper, habanero, paprika, and ketchup.
  • 13 cook 15 minutes more, adding water as necessary to keep the mixture moist.
  • 14 cool before filling pastry.
  • 15 roll the dough out to 1/8-inch thick.
  • 16 cut the dough into 6-inch circles or whatever shapes you want.
  • 17 put filling on one half of the dough.
  • 18 brush the edges of the dough with the beaten egg.
  • 19 fold the dough over the filling to make a half moon shape and press the edges together firmly, sealing them with a fork.
  • 20 place the patties on a greased cookie sheet and bake 20-25 minutes.
  • 21 if making cocktail size, cut the dough into 3-inch circles.
