Mom's Best Meat Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 medium onion, minced
  • 6 slices bacon, diced
  • 2 garlic cloves, minced
  • 1 1/2 lbs lean ground beef
  • 2 eggs, lightly beaten
  • 4 tablespoons bottled horseradish
  • 1/2 cup old fashioned oats
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1 teaspoon dill seed
  • 1 teaspoon dried thyme
  • 1/3 cup tomato sauce or 1/3 cup ketchup
  • 2 tablespoons brown sugar, packed

Recipe

  • 1 saute the onion with bacon and garlic until golden.
  • 2 with hands gently combine meat, bacon-garlic-onion mixture, eggs, horseradish, oats, parmesan cheese, and spices. knead gently but thoughtly until mixture is very light and fluffy.
  • 3 heat oven to 350.
  • 4 pack the mixture into 2 quart rectangular glass loaf pan, leveling the top gently.
  • 5 spoon tomato sauce or ketchup over the top of the loaf and sprinkle with the brown sugar.
  • 6 bake loaf for 1 1/2 hours. let cool 30 minutes before slicing.
  • 7 you can also cool completely, cover tightly in plastic wrap, chill overnight. using thin knife, slice the loaf into thin slices for sandwiches.
