Mom's Best Meat Loaf

Ingredients
- 1 medium onion, minced
- 6 slices bacon, diced
- 2 garlic cloves, minced
- 1 1/2 lbs lean ground beef
- 2 eggs, lightly beaten
- 4 tablespoons bottled horseradish
- 1/2 cup old fashioned oats
- 1/3 cup grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon celery seed
- 1 teaspoon dill seed
- 1 teaspoon dried thyme
- 1/3 cup tomato sauce or 1/3 cup ketchup
- 2 tablespoons brown sugar, packed
Recipe
- 1 saute the onion with bacon and garlic until golden.
- 2 with hands gently combine meat, bacon-garlic-onion mixture, eggs, horseradish, oats, parmesan cheese, and spices. knead gently but thoughtly until mixture is very light and fluffy.
- 3 heat oven to 350.
- 4 pack the mixture into 2 quart rectangular glass loaf pan, leveling the top gently.
- 5 spoon tomato sauce or ketchup over the top of the loaf and sprinkle with the brown sugar.
- 6 bake loaf for 1 1/2 hours. let cool 30 minutes before slicing.
- 7 you can also cool completely, cover tightly in plastic wrap, chill overnight. using thin knife, slice the loaf into thin slices for sandwiches.
