- 2 cups cooked chicken, diced
- 1 celery rib, diced
- 2 hard-cooked eggs, diced
- 1 small cucumber, diced
- 1/2 cup low-fat mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon dried mustard
- 1/8 teaspoon pepper
- 8 -12 slices sandwich bread
Recipe
- 1 in a bowl combine first 8 ingredients. serve on bread. (also good in sliced pita pockets).
