Reuben Sandwich - Microwave

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 6 ounces corned beef, sliced
  • 1/4 cup sauerkraut, rinsed and drained
  • 2 slices swiss cheese
  • 4 slices rye bread, toasted
  • thousand island dressing
  • mustard (optional)

Recipe

  • 1 on a medium-size microwave-safe dinner plate, mound corned beef in 2 piles.
  • 2 top each pile of meat with the sauerkraut.
  • 3 micro-cook, uncovered, on 100% power (high) 3 to 4 minutes or until heated.
  • 4 top each pile with a cheese slice.
  • 5 cook, uncovered, on high 1 to 2 minutes more or till cheese is melted.
  • 6 meanwhile, place toasted bread on individual plates.
  • 7 spread one side of bread slices with salad dressing or mustard.
  • 8 to serve, use a wide spatula to transfer each mound of meat to the dressing side of 2 bread slices.
  • 9 top with remaining bread slices, dressing-side down.
