Healthy Tofu Mayonnaise

Ingredients

  • 1/2 cup raw cashews
  • 1/3 cup water
  • 1/3 cup lemon juice
  • 1 lb medium firm tofu, drained and rinsed
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 tablespoon honey
  • 1 tablespoon fresh dill (optional)

Recipe

  • 1 place the ingredients in blender and blend until smooth and creamy. do not underblend.
  • 2 pour into serving jars and refrigerate. serve chilled.
