Perked Up Grilled Cheese Sandwich

Ingredients

- 2 slices bread
- 1 ounce swiss cheese, made with 2% milk
- 1/4 cup low-fat cheddar cheese, shredded
- 1 teaspoon jalapeno, roasted and minced
- 2 teaspoons butter, softened
- 1/2 teaspoon reduced-sodium taco seasoning mix
Recipe
- 1 combine taco seasoning and butter thoroughly.
- 2 thinly coat 1 side of each bread slice with 1/2 teaspoon butter mixture.
- 3 heat skillet to medium.
- 4 when hot, lay down 1 slice of bread, buttered side down.
- 5 then, layer slice of swiss cheese, minced roasted jalapenos and cheddar.
- 6 top sandwich with the remaining bread slice, buttered side up.
- 7 flip when sandwich has reached desired brownness. raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
