Reuben Sandwiches

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 12 ounces thinly sliced canned or fully cooked corned beef (i use canned)
  • 8 slices light rye bread or 8 slices dark rye bread
  • 1 (8 ounce) can sauerkraut, drained, if you prefer, use fresh cooked sauerkraut
  • 1/2 cup thousand island dressing (use no other kind)
  • 4 slices swiss cheese
  • 2 -3 tablespoons butter or 2 -3 tablespoons margarine

Recipe

  • 1 arrange corned beef on 4 slices of bread.
  • 2 top each with a quarter or the sauerkraut, 2 tablespoons of the dressing and a slice of the cheese.
  • 3 top with remaining bread slices.
  • 4 in a skillet over medium heat, melt 2 to 3 tablespoons butter.
  • 5 cook sandwiches until bread is lightly browned on one side.
  • 6 turn sandwiches over, and brown on other side, adding more butter if necessary.
  • 7 cook until cheese is melted and meat is heated through.
