Reuben Sandwiches

Ingredients
- Servings: 4
- 12 ounces thinly sliced canned or fully cooked corned beef (i use canned)
- 8 slices light rye bread or 8 slices dark rye bread
- 1 (8 ounce) can sauerkraut, drained, if you prefer, use fresh cooked sauerkraut
- 1/2 cup thousand island dressing (use no other kind)
- 4 slices swiss cheese
- 2 -3 tablespoons butter or 2 -3 tablespoons margarine
Recipe
- 1 arrange corned beef on 4 slices of bread.
- 2 top each with a quarter or the sauerkraut, 2 tablespoons of the dressing and a slice of the cheese.
- 3 top with remaining bread slices.
- 4 in a skillet over medium heat, melt 2 to 3 tablespoons butter.
- 5 cook sandwiches until bread is lightly browned on one side.
- 6 turn sandwiches over, and brown on other side, adding more butter if necessary.
- 7 cook until cheese is melted and meat is heated through.
