Kick-a-- Egg Salad

Ingredients
- Servings: 2
- 6 chopped hard-boiled eggs (cover eggs in cold water in saucepan, bring to boil on high and then simmer on medium low for 15 min)
- 1/2 teaspoon vinegar (or 1/2 teaspoon juice from jar dill pickles)
- 2 -3 tablespoons mayonnaise
- 1/2 teaspoon mustard
- salt and pepper
- red pepper flakes, 1 shake (optional)
- 1/2 stalk chopped celery (optional)
- 1 tablespoon chopped green onion (optional)
Recipe
- 1 boil eggs and cool, peel and chop.
- 2 add remaining ingredients and mash together.
- 3 spread on sandwich bread or toast.
- 4 *note - add more or less of ingredients to your taste.
