Prawn Gyros With Mango Marmalade & Ginger Tzatziki

Ingredients

  • Servings: 4
  • 1 kg large shrimp
  • 1 shallot, finely sliced
  • 1 garlic clove, finely sliced
  • 1 lemon, juice of
  • 8 ounces rose wine
  • 1 tablespoon paprika
  • 1/3 teaspoon cumin
  • 1/3 teaspoon fennel seed, crushed
  • olive oil
  • salt
  • pepper
  • 1 large mango, very ripe, peeled and cut into small pieces
  • 1 cup brown sugar
  • 1/2 teaspoon cardamom seed, ground
  • 1/2 teaspoon curry powder
  • 1 lemon, juice of
  • 1/2 kg yogurt
  • salt
  • 1 tablespoon ground ginger
  • 1 small cucumber

Recipe

  • 1 prawns: peel the prawns and remove the heads, putting half the heads to one side.
  • 2 in a deep frying pan, make a marinade of the shallot, garlic, lemon juice, wine, paprika, cumin, olive oil, salt and pepper.
  • 3 let the prawns marinate for about one hour.

  • 10 tzatziki:wash and peel the cucumber, grate and strain.
  • 11 put the yogurt in a bowl, add salt, ginger and cucumber and mix well.
  • 12 serve the prawns, marmalade and tzatziki separately on the plate.
