Prawn Gyros With Mango Marmalade & Ginger Tzatziki

Ingredients

- 1 kg large shrimp
- 1 shallot, finely sliced
- 1 garlic clove, finely sliced
- 1 lemon, juice of
- 8 ounces rose wine
- 1 tablespoon paprika
- 1/3 teaspoon cumin
- 1/3 teaspoon fennel seed, crushed
- olive oil
- salt
- pepper
- 1 large mango, very ripe, peeled and cut into small pieces
- 1 cup brown sugar
- 1/2 teaspoon cardamom seed, ground
- 1/2 teaspoon curry powder
- 1 lemon, juice of
- 1/2 kg yogurt
- salt
- 1 tablespoon ground ginger
- 1 small cucumber
Recipe
- 1 prawns: peel the prawns and remove the heads, putting half the heads to one side.
- 2 in a deep frying pan, make a marinade of the shallot, garlic, lemon juice, wine, paprika, cumin, olive oil, salt and pepper.
- 3 let the prawns marinate for about one hour.
- 4 then add the heads and simmer for 4-5 minutes.
- 5 remove from the hob and remove the heads.
- 6 remove the prawns from the sauce, chop into small pieces, arrange on a plate and pour the sauce over them.
- 7 marmalade: boil a cup of water in a saucepan with the sugar for 5-6 minutes to make a thick syrup.
- 8 add the spices and remove from heat.
- 9 add the mango and lemon juice and stir. the mixture should be the texture of marmalade.
- 10 tzatziki:wash and peel the cucumber, grate and strain.
- 11 put the yogurt in a bowl, add salt, ginger and cucumber and mix well.
- 12 serve the prawns, marmalade and tzatziki separately on the plate.
