Mexican Grilled Cheese Sandwiches

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 1 medium yellow sweet bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 2 teaspoons olive oil
  • 8 slices rye bread
  • 2 tablespoons mayonnaise
  • 1 cup fresh salsa, well drained
  • 3/4 cup shredded mexican blend cheese
  • 2 tablespoons butter, softened

Recipe

  • 1 in a small skillet, saute peppers in oil until tender.
  • 2 spread four bread slices with mayonnaise.
  • 3 layer with peppers, salsa, and cheese.
  • 4 top with remaining bread.
  • 5 butter outsides of sandwiches.
  • 6 in a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted.
