"chicken" Salad

Ingredients
- Servings: 4
- 15 ounces chickpeas
- 1/4-1/2 cup vegan mayonnaise
- 1 tablespoon mustard
- 1/2 tablespoon soy yogurt (any flavor)
- 1 apple, chopped
- 1 green onion, chopped
- 1/4 cup sliced almonds or 1/4 cup walnuts
- 1/2 teaspoon lemon juice
- salt
- pepper
Recipe
- 1 drain chick peas and pour into meduim sized bowl, crush them up with a fork.
- 2 add in apple,green onion, almonds, salt and pepper and stir up.
- 3 add vegan mayo, mustard, soy yogurt and lemon juice and stir.
- 4 taste test it and add more ingredient if needed.
- 5 chill for an hour (optional).
- 6 serve in a wrap or sandwich with tomatoes, sprouts and spinach.
