"chicken" Salad

Ingredients

  • Servings: 4
  • 15 ounces chickpeas
  • 1/4-1/2 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 1/2 tablespoon soy yogurt (any flavor)
  • 1 apple, chopped
  • 1 green onion, chopped
  • 1/4 cup sliced almonds or 1/4 cup walnuts
  • 1/2 teaspoon lemon juice
  • salt
  • pepper

Recipe

  • 1 drain chick peas and pour into meduim sized bowl, crush them up with a fork.
  • 2 add in apple,green onion, almonds, salt and pepper and stir up.
  • 3 add vegan mayo, mustard, soy yogurt and lemon juice and stir.
  • 4 taste test it and add more ingredient if needed.
  • 5 chill for an hour (optional).
  • 6 serve in a wrap or sandwich with tomatoes, sprouts and spinach.
