"chicken" Salad Sandwich

Ingredients

  • Servings: 4
  • 1 lb chicken seitan strips
  • 1/3 cup grated carrot
  • 1 stalk celery, minced
  • 1/3 cup minced red onions or 1/3 cup minced green onion
  • 1/3 cup pecans (optional)
  • 1/3 cup mayonnaise or 1/3 cup vegan mayonnaise
  • salt and pepper
  • 8 slices bread
  • lettuce leaf, to garnish
  • tomato, slices to garnish

Recipe

  • 1 cut seitan into bite-sized pieces.
  • 2 in large bowl, mix seitan and remaining ingredients.
  • 3 serve on bread with lettuce and tomatoes.
  • 4 note for vegan use the vegan mayo. why? regular mayo contains eggs.
