"chicken" Salad Sandwich

Ingredients
- Servings: 4
- 1 lb chicken seitan strips
- 1/3 cup grated carrot
- 1 stalk celery, minced
- 1/3 cup minced red onions or 1/3 cup minced green onion
- 1/3 cup pecans (optional)
- 1/3 cup mayonnaise or 1/3 cup vegan mayonnaise
- salt and pepper
- 8 slices bread
- lettuce leaf, to garnish
- tomato, slices to garnish
Recipe
- 1 cut seitan into bite-sized pieces.
- 2 in large bowl, mix seitan and remaining ingredients.
- 3 serve on bread with lettuce and tomatoes.
- 4 note for vegan use the vegan mayo. why? regular mayo contains eggs.
