Kate's Spinach Baguette Sandwich

Ingredients

  • 1 six-inch baguette
  • 1/2 cup baby spinach
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons cream cheese
  • 1/2 teaspoon dried basil

Recipe

  • 1 cut the baguette in half, longwise.
  • 2 rinse the spinach, squeeze it flat between both hands, and dry it gently between two paper towels so that it retains its shape.
  • 3 spread the cream cheese on the bottom half.
  • 4 put half the spinach on top and cover it with half the balsamic vinegar.
  • 5 put the other spinach over that and cover it with the rest of the vinegar.
  • 6 sprinkle the basil over the top.
