Ingredients
- 2 chicken breast halves, poached
- 1/4 cup celery, finely chopped
- 1/4 cup scallion, finely chopped
- 1/2 cup low-fat plain yogurt
- 2 tablespoons basil, chopped (fresh)
- 1/2 lemon, juice of
- salt
- pepper
Recipe
- 1 in large bowl, stir together scelery and scallions, yoghurt and basil. season with salt and pepper.
- 2 fold in chicken breast halves, cooled and shredded.
- 3 season with salt, pepper, and fresh lemon juice to taste.
- 4 serve over greens or in a sandwich or wrap.
