Chicken Salad With Scallions And Yoghurt

Ingredients

  • 2 chicken breast halves, poached
  • 1/4 cup celery, finely chopped
  • 1/4 cup scallion, finely chopped
  • 1/2 cup low-fat plain yogurt
  • 2 tablespoons basil, chopped (fresh)
  • 1/2 lemon, juice of
  • salt
  • pepper

Recipe

  • 1 in large bowl, stir together scelery and scallions, yoghurt and basil. season with salt and pepper.
  • 2 fold in chicken breast halves, cooled and shredded.
  • 3 season with salt, pepper, and fresh lemon juice to taste.
  • 4 serve over greens or in a sandwich or wrap.
