Roasted Lamb Banh Mi

Ingredients
- 1 loaf whole wheat french bread
- 2 cups broccoli slaw mix (fresh produce section)
- 1/2 cup sugar
- 1/4 cup vinegar
- 2 lamb tenderloin, trimmed
- 1 cup fresh cilantro leaves
- 1/4 cup mayonnaise, low fat
- salt and pepper
Recipe
- 1 preheat oven to 400 degrees.
- 2 mix the broccoli slaw, sugar and vinegar in a bowl. let sit in the fridge while preparing the rest of the sandwich.
- 3 season the lamb with salt and pepper and roast for 20 minutes or until cooked to your liking (150-160 degrees).
- 4 let rest at least 5 minutes and slice thin.
- 5 cut the baguette in to 4 equal pieces and split in half. spread mayonnaise on the bread, top with the roasted lamb, cilantro, and broccoli slaw.
