Roasted Lamb Banh Mi

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 loaf whole wheat french bread
  • 2 cups broccoli slaw mix (fresh produce section)
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 2 lamb tenderloin, trimmed
  • 1 cup fresh cilantro leaves
  • 1/4 cup mayonnaise, low fat
  • salt and pepper

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix the broccoli slaw, sugar and vinegar in a bowl. let sit in the fridge while preparing the rest of the sandwich.
  • 3 season the lamb with salt and pepper and roast for 20 minutes or until cooked to your liking (150-160 degrees).
  • 4 let rest at least 5 minutes and slice thin.
  • 5 cut the baguette in to 4 equal pieces and split in half. spread mayonnaise on the bread, top with the roasted lamb, cilantro, and broccoli slaw.
