Lori's Saigon Lamb Baguettes

Ingredients

- 1 lb lamb tenderloin
- 1 shallot (minced)
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 3 tablespoons nuoc nam
- 2 tablespoons asian chili sauce
- 3 tablespoons basil olive oil
- 2 shallots (sliced thin)
- 1 baguette (split lengthwise)
- 1/2 cup lamb pate
- 2 carrots (peeled, shredded)
- 1 cucumber (peeled, seeded, sliced thin)
- 1 thai peppers (seeded, minced)
- 2 tablespoons cilantro (minced)
Recipe
- 1 heat oven 375.
- 2 rinse and dry lamb.
- 3 combine the shallots, lime juice, sugar, nuoc nam and chili sauce.
- 4 rub half all over lamb. reserve rest.
- 5 heat 2 tablespoons of the oil in an iron skillet.
- 6 sear lamb all over. cover. roast 20 minutes.
- 7 remove from oven. let cool 2 hours.
- 8 pour juices into reserved mix. set aside.
- 9 slice lamb thin. set aside.
- 10 heat remaining oil in skillet.
- 11 add shallots. saute 3 minutes. let cool.
- 12 toast baguette. spread with pate.
- 13 top with shallots, lamb, carrots, cucumcer and pepper. drizzle with half of the sauce. top with cilantro.
- 14 serve with extra sauce for dipping at table.
