Darcie's Green Pepper Sandwiches

Total Time: 7 mins Preparation Time: 5 mins Cook Time: 2 mins

Ingredients

  • Servings: 2
  • 2 green peppers, sliced
  • 1/4 vidalia onions or 1/4 other mild onion, sliced,then rings seperated
  • 4 slices whole wheat bread (toasted)
  • 2 tablespoons butter
  • salt (to taste)

Recipe

  • 1 prepare green peppers and onions.
  • 2 toast whole wheat bread; butter while hot.
  • 3 arrange layer of green pepper slices on first slice of buttered toast (buttered side towards veggies).
  • 4 arrange onion rings on top of green peppers.
  • 5 salt to taste.
  • 6 place second slice of whole wheat toast (again buttered side towards veggies) on top of layers.
  • 7 serve immediately.
