Curried Chicken Sandwich With Chutney And Cheddar

Ingredients
- Servings: 2
- 1 tablespoon oil
- 1 tablespoon curry powder (or more)
- 2 chicken breasts
- cheddar cheese, sliced
- fruit chutney
- 2 pita bread
Recipe
- 1 mix curry and oil to make a thin paste.
- 2 marinate chicken breasts for at least an hour in the refrigerator.
- 3 grill or broil chicken breasts until no longer pink.
- 4 i cooked mine stove-top in a non-stick grill pan.
- 5 use the chutney as a glaze and/or condiment.
- 6 i used peach chutney/relish for these last night, but a mango chutney would be delicious also.
- 7 melt cheddar onto buns or on chicken breast.
- 8 if you are not using a hot curry powder but still like a good kick, try adding chopped chilies (fresh or dried) to the marinade.
- 9 put your sandwiches together and enjoy!
