Curried Chicken Sandwich With Chutney And Cheddar

Ingredients

  • Servings: 2
  • 1 tablespoon oil
  • 1 tablespoon curry powder (or more)
  • 2 chicken breasts
  • cheddar cheese, sliced
  • fruit chutney
  • 2 pita bread

Recipe

  • 1 mix curry and oil to make a thin paste.
  • 2 marinate chicken breasts for at least an hour in the refrigerator.
  • 3 grill or broil chicken breasts until no longer pink.
  • 4 i cooked mine stove-top in a non-stick grill pan.
  • 5 use the chutney as a glaze and/or condiment.
  • 6 i used peach chutney/relish for these last night, but a mango chutney would be delicious also.
  • 7 melt cheddar onto buns or on chicken breast.
  • 8 if you are not using a hot curry powder but still like a good kick, try adding chopped chilies (fresh or dried) to the marinade.
  • 9 put your sandwiches together and enjoy!
