Chicken Salad Wrap

Ingredients

- 1 lb boneless skinless chicken breast
- 1/3 cup miracle whip light or 1/3 cup mayonnaise
- 1 teaspoon prepared mustard
- 1/2 cup red pepper, diced
- romaine lettuce leaf
- 1/4 teaspoon onion powder
- salt and pepper
- 2 -3 whole wheat sandwich wraps
Recipe
- 1 bring a large saucepan of water to boil.
- 2 put the raw chicken breast into the water.
- 3 as soon as it stops boiling, take out the chicken.
- 4 return the water to boil then put the chicken back in and cover tightly.
- 5 remove from the burner and leave untouched for one hour.
- 6 remove chicken from the water and allow cooling enough to handle.
- 7 dice chicken into bite sized pieces.
- 8 add the miracle whip, mustard, red pepper, onion powder, salt and pepper.
- 9 line whole wheat wrap with romaine lettuce leaves.
- 10 fill with chicken mixture and roll up.
