Roasted Red Pepper, Pepper Jack, And Pepperoni Sandwiches

Ingredients

  • Servings: 4
  • 1 round loaf sourdough bread (about 7-inches in diameter)
  • 1 cup monterey jack pepper cheese, grated
  • 1/2 cup coriander sprig, washed, spun dry, chopped
  • 16 slices pepperoni
  • 2 (7 ounce) jars roasted red peppers, drained and patted dry

Recipe

  • 1 preheat oven to 375°f.
  • 2 cut eight 1/2-inch-thick slices from center of sourdough loaf.
  • 3 in a small bowl toss together pepper jack and coriander.
  • 4 make sandwiches on bread with pepperoni, roasted peppers, and cheese mixture.
  • 5 bake sandwiches on a baking sheet in middle of oven until cheese is melted, about 5 minutes.
