Oriental Chicken Sandwich

Ingredients
- 1 tablespoon soy sauce
- 1 tablespoon clear honey
- 1 teaspoon sesame oil
- 1 garlic clove, crushed & minced
- 8 ounces boneless skinless chicken breasts
- 4 slices sourdough bread
- 4 tablespoons peanut butter, variety of choice
- 2 tablespoons bean sprouts
- 2 tablespoons red bell peppers, seeded and chopped
Recipe
- 1 mix together the soy sauce, honey, sesame oil and garlic.
- 2 using a pastry brush, brush both sides of each chicken breast with the mixture and allow to rest for 15 minutes.
- 3 grill (see note below) chicken breasts for 3 to 4 minutes on each side until cooked through.
- 4 slice thinly and keep warm.
- 5 spread each slice of bread with 1 tablespoon of peanut butter.
- 6 arrange sliced chicken equally on two of the bread slices.
- 7 add equal amounts of the beansprouts and chopped red pepper on top of the chicken slices.
- 8 close the sandwich with the other slice of bread and serve immediately.
- 9 note: no grilling method was suggested but, in my opinion, they will all work equally well.
