Oriental Chicken Sandwich

Total Time: 16 mins Preparation Time: 10 mins Cook Time: 6 mins

Ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon clear honey
  • 1 teaspoon sesame oil
  • 1 garlic clove, crushed & minced
  • 8 ounces boneless skinless chicken breasts
  • 4 slices sourdough bread
  • 4 tablespoons peanut butter, variety of choice
  • 2 tablespoons bean sprouts
  • 2 tablespoons red bell peppers, seeded and chopped

Recipe

  • 1 mix together the soy sauce, honey, sesame oil and garlic.
  • 2 using a pastry brush, brush both sides of each chicken breast with the mixture and allow to rest for 15 minutes.
  • 3 grill (see note below) chicken breasts for 3 to 4 minutes on each side until cooked through.
  • 4 slice thinly and keep warm.
  • 5 spread each slice of bread with 1 tablespoon of peanut butter.
  • 6 arrange sliced chicken equally on two of the bread slices.
  • 7 add equal amounts of the beansprouts and chopped red pepper on top of the chicken slices.
  • 8 close the sandwich with the other slice of bread and serve immediately.
  • 9 note: no grilling method was suggested but, in my opinion, they will all work equally well.
