Mexican Grilled Cheese Sandwiches For 2

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 4 slices bread, homemade preferably (i used best ever bread (abm))
  • butter, for spreading
  • 2 ounces cheddar cheese
  • 2 ounces cotija cheese
  • 1/3 cup homemade salsa
  • 1 small avocado, peeled, pitted and sliced (optional)

Recipe

  • 1 spread butter on the outside of each slice of bread.
  • 2 divide and place the cheese, salsa, (and avocado if using) on the unbuttered bread slices.
  • 3 place the other slice of bread on top, buttered side up.
  • 4 heat up a skillet on medium to medium-high heat and brown the sandwiches for about 5 minutes or until golden brown on each side.
