Mexican Grilled Cheese Sandwiches For 2

Ingredients
- 4 slices bread, homemade preferably (i used best ever bread (abm))
- butter, for spreading
- 2 ounces cheddar cheese
- 2 ounces cotija cheese
- 1/3 cup homemade salsa
- 1 small avocado, peeled, pitted and sliced (optional)
Recipe
- 1 spread butter on the outside of each slice of bread.
- 2 divide and place the cheese, salsa, (and avocado if using) on the unbuttered bread slices.
- 3 place the other slice of bread on top, buttered side up.
- 4 heat up a skillet on medium to medium-high heat and brown the sandwiches for about 5 minutes or until golden brown on each side.
