Lighter Reuben Sandwich

Ingredients
- 1 lb sauerkraut
- 1 cup beer
- 1/4 cup spicy brown mustard
- 8 slices rye bread
- 4 teaspoons spicy brown mustard
- 8 slices deli corned beef
- 8 slices deli ham
- 4 slices low-fat swiss cheese
- 4 teaspoons smart balance butter spread
Recipe
- 1 in a medium skillet combine sauerkraut, beer, and mustard. bring to boil, then reduce heat to med. and simmer until liquid is absorbed, about 10 minutes.
- 2 spray an indoor grill or waffle maker wth cooking spray.
- 3 assemble sandwich. lay out 4 slices of bread top each with mustard, sauerkraut, 2 slices corned beef, 2 slices ham, and 1 slice cheese. top each sandwich with remaining slices of bread. spread 1 tsp butter on top and bottom of each sandwich. cook on grill till lightly browned and cheese melts.
