Lighter Reuben Sandwich

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 1 lb sauerkraut
  • 1 cup beer
  • 1/4 cup spicy brown mustard
  • 8 slices rye bread
  • 4 teaspoons spicy brown mustard
  • 8 slices deli corned beef
  • 8 slices deli ham
  • 4 slices low-fat swiss cheese
  • 4 teaspoons smart balance butter spread

Recipe

  • 1 in a medium skillet combine sauerkraut, beer, and mustard. bring to boil, then reduce heat to med. and simmer until liquid is absorbed, about 10 minutes.
  • 2 spray an indoor grill or waffle maker wth cooking spray.
  • 3 assemble sandwich. lay out 4 slices of bread top each with mustard, sauerkraut, 2 slices corned beef, 2 slices ham, and 1 slice cheese. top each sandwich with remaining slices of bread. spread 1 tsp butter on top and bottom of each sandwich. cook on grill till lightly browned and cheese melts.
