Italian Chicken Sandwich

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon fresh ground black pepper
  • 4 chicken breast halves, boneless and skinless
  • natural olive oil nonstick cooking spray
  • 6 tablespoons fresh lemon juice
  • 4 garlic cloves, minced
  • 4 teaspoons worcestershire sauce
  • 1 teaspoon italian seasoning
  • 1 dash hot pepper sauce
  • 2 tablespoons walnuts, toasted and chopped
  • 4 teaspoons grated parmigiano-reggiano cheese
  • 4 wheat sandwich buns, sliced lengthwise
  • 4 romaine lettuce leaves

Recipe

  • 1 combine flour and pepper. coat chicken with flour mixture, shaking off excess.
  • 2 spray a 10-inch skillet with cooking spray for 2 seconds; over medium heat, lightly brown chicken on both sides.
  • 3 combine lemon juice, garlic, worcestershire and hot pepper sauce and italian seasoning; pour over chicken.
  • 4 cover; simmer for 15 minutes or until chicken is done.
  • 5 sprinkle walnuts and cheese over chicken.
  • 6 arrange lettuce on sandwich rolls; top with chicken.
  • 7 serve immediately.
