Guacamole Sandwiches

Ingredients
- Servings: 6
- 2 avocados, peeled and quartered
- 1/3 cup cottage cheese
- 1 1/2 tablespoons lemon juice
- 1 1/2 teaspoons garlic salt
- 6 flour tortillas (8 inch)
- 6 slices cheddar cheese
- 3 tomatoes, sliced
- 1 cup alfalfa sprouts or 1 cup shredded lettuce
- commercial taco sauce (optional)
Recipe
- 1 position knife blade in food processor bowl; add first 4 ingredients, and process until smooth. set aside.
- 2 place tortillas on a lightly greased baking sheet. top with cheese slices.
- 3 broil 6 inches from heat (with electric oven door partially opened) just until cheese melts.
- 4 spoon avocado mixture evenly onto tortillas; top evenly with tomato slices and sprouts. fold tortillas in half; serve with taco sauce, if desired.
