O-m-g Pimento Cheese Panini

Ingredients

  • Servings: 2
  • 1 (4 ounce) jar chopped pimiento, drained
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 1/3 cup mayonnaise
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 4 slices sourdough bread (1/2-inch thick)
  • 1 tablespoon butter, melted

Recipe

  • 1 preheat panini grill to high.
  • 2 in a bowl, combine the pimentos, cheddar, monterey jack, mayonnaise, pepper, salt, garlic powder, and paprika; taste and adjust seasoning, if needed.
  • 3 brush one side of each bread slice with butter.
  • 4 place two slices on a work surface, buttered side down, and spread evenly with pimento cheese.
  • 5 cover with top halves, buttered side up, and press gently to pack.
  • 6 place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  • 7 serve immediately.
