Ingredients

- 1 (4 ounce) jar chopped pimiento, drained
- 1 cup shredded mild cheddar cheese
- 1 cup shredded monterey jack cheese
- 1/3 cup mayonnaise
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 4 slices sourdough bread (1/2-inch thick)
- 1 tablespoon butter, melted
Recipe
- 1 preheat panini grill to high.
- 2 in a bowl, combine the pimentos, cheddar, monterey jack, mayonnaise, pepper, salt, garlic powder, and paprika; taste and adjust seasoning, if needed.
- 3 brush one side of each bread slice with butter.
- 4 place two slices on a work surface, buttered side down, and spread evenly with pimento cheese.
- 5 cover with top halves, buttered side up, and press gently to pack.
- 6 place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
- 7 serve immediately.
