Grilled Ham And Egg Salad Monte Cristos

Ingredients

- 6 hard-boiled eggs, chopped
- 1 cup diced cooked ham
- 1/2 cup finely chopped celery
- 1 tablespoon minced onion
- 1/2 cup mayonnaise
- 2 teaspoons prepared mustard
- 1 teaspoon prepared horseradish (or more)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 12 slices whole wheat bread or 12 slices bread
- cooking oil
- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups milk
- 2 eggs, lightly beaten
Recipe
- 1 combine hard-cooked eggs, ham, celery, onion, mayonnaise, mustard, horseradish, salt and pepper; spread on six slices of bread. top with remaining bread and set aside.
- 2 in a bowl, whisk batter ingredients until well blended. heat about 1/2 inches of oil in a large deep skillet. dip sandwiches into batter.
- 3 fry in hot oil for 3 minutes on each side or until golden brown. drain on paper towels.
