Grilled Ham And Egg Salad Monte Cristos

Ingredients

  • Servings: 6
  • 6 hard-boiled eggs, chopped
  • 1 cup diced cooked ham
  • 1/2 cup finely chopped celery
  • 1 tablespoon minced onion
  • 1/2 cup mayonnaise
  • 2 teaspoons prepared mustard
  • 1 teaspoon prepared horseradish (or more)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 slices whole wheat bread or 12 slices bread
  • cooking oil
  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 2 eggs, lightly beaten

Recipe

  • 1 combine hard-cooked eggs, ham, celery, onion, mayonnaise, mustard, horseradish, salt and pepper; spread on six slices of bread. top with remaining bread and set aside.
  • 2 in a bowl, whisk batter ingredients until well blended. heat about 1/2 inches of oil in a large deep skillet. dip sandwiches into batter.
  • 3 fry in hot oil for 3 minutes on each side or until golden brown. drain on paper towels.
