Paula Deen's Salmon Salad

Ingredients

  • Servings: 4
  • 2 cups salmon, cooked and flaked
  • 2 hard-boiled eggs, crushed
  • 1 red bell peppers or 1 green bell pepper, diced
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 cup onion, chopped
  • 4 -5 tablespoons mayonnaise, enough to moisten
  • 1/4 teaspoon cayenne pepper
  • salt and pepper
  • 1/2 lemon, juiced

Recipe

  • 1 in a large bowl, gently toss together the salmon and crushed hard-boiled eggs.
  • 2 in another bowl, combine bell pepper, cucumber, onion, and mayonnaise.
  • 3 add seasonings and stir to combine.
  • 4 pour mixture over salmon, add lemon juice, and toss lightly to combine.
  • 5 serve over lettuce or as a sandwich.
