Pan Con Lechon (roasted Lamb Sandwich)

Ingredients

  • Servings: 6
  • 2 loaves cuban bread or 2 loaves french bread, sliced in half
  • 4 tablespoons butter
  • 1 lb lamb (shredded or chopped)
  • 1 onion, sliced thin
  • seasoning, mojo sauce for sprinkling on top

Recipe

  • 1 butter both sides of each loaf.
  • 2 lamb needs to be warm.
  • 3 heat some up in frying pan with a dash of vegetable oil.
  • 4 chop or shred or pull the lamb apart.
  • 5 layer the shredded lamb on bread and cover with a single layer of sliced onions.
  • 6 sprinkle with mojo sauce.
  • 7 slice in half diagonally and serve with nice ice cold beer, depending on the weather.
  • 8 may also be done on a sandwich press, griddle or panini press.
