Pan Con Lechon (roasted Lamb Sandwich)

Ingredients
- Servings: 6
- 2 loaves cuban bread or 2 loaves french bread, sliced in half
- 4 tablespoons butter
- 1 lb lamb (shredded or chopped)
- 1 onion, sliced thin
- seasoning, mojo sauce for sprinkling on top
Recipe
- 1 butter both sides of each loaf.
- 2 lamb needs to be warm.
- 3 heat some up in frying pan with a dash of vegetable oil.
- 4 chop or shred or pull the lamb apart.
- 5 layer the shredded lamb on bread and cover with a single layer of sliced onions.
- 6 sprinkle with mojo sauce.
- 7 slice in half diagonally and serve with nice ice cold beer, depending on the weather.
- 8 may also be done on a sandwich press, griddle or panini press.
