Lamb Tenderloin Pita Sandwiches

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 lamb tenderloin
  • 1/4 cup fennel mixed spice (fennel spice) or 1/4 cup other dry rub seasonings
  • 1 recipe tzatziki (tzatziki)
  • 1 onion, sliced thinly
  • 1 red bell pepper, sliced thinly
  • pita bread, warmed
  • olive oil
  • salt and pepper

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 cut lamb tenderloin in half across and rub each piece liberally with fennel spice.
  • 3 brown in a couple of tablespoons of olive oil in a saute pan.
  • 4 put pan in oven for 12-15 minutes until lamb is medium rare.
  • 5 remove lamb from pan and let sit on a cutting board for 10 minutes to rest.
  • 6 meanwhile saute onion and pepper in olive oil over medium high heat until caramelized but not completely soft.
  • 7 slice tenderloin very thinly.
  • 8 to serve put tenderloin, vegetables and pita on a platter along with a bowl of tzatziki.
  • 9 make sandwiches by placing some onion/pepper mix, lamb and tzatziki inside warm pita bread.
