Lamb Tenderloin Pita Sandwiches

Ingredients

- 1 lamb tenderloin
- 1/4 cup fennel mixed spice (fennel spice) or 1/4 cup other dry rub seasonings
- 1 recipe tzatziki (tzatziki)
- 1 onion, sliced thinly
- 1 red bell pepper, sliced thinly
- pita bread, warmed
- olive oil
- salt and pepper
Recipe
- 1 preheat oven to 400 degrees.
- 2 cut lamb tenderloin in half across and rub each piece liberally with fennel spice.
- 3 brown in a couple of tablespoons of olive oil in a saute pan.
- 4 put pan in oven for 12-15 minutes until lamb is medium rare.
- 5 remove lamb from pan and let sit on a cutting board for 10 minutes to rest.
- 6 meanwhile saute onion and pepper in olive oil over medium high heat until caramelized but not completely soft.
- 7 slice tenderloin very thinly.
- 8 to serve put tenderloin, vegetables and pita on a platter along with a bowl of tzatziki.
- 9 make sandwiches by placing some onion/pepper mix, lamb and tzatziki inside warm pita bread.
