Chocolate Ice-cream Sandwiches

Total Time: 1 hr Preparation Time: 50 mins Cook Time: 10 mins

Ingredients

  • 1/4 cup plain flour
  • 2 tablespoons clear honey
  • 2 tablespoons caster sugar
  • 1 egg
  • 2 tablespoons butter, melted
  • 200 g low-fat ice cream
  • 100 g dark chocolate, melted, to serve

Recipe

  • 1 preheat oven to 180c/160c fan forced. line 2 large baking trays with baking paper. process flour, honey, sugar, egg whites and margarine until combined.
  • 2 for each biscuit, place 1 teaspoonful of mixture on prepared tray; spread to a 5cm circle. bake for 8-10 minutes or until golden brown, swapping trays halfway through cooking. let biscuits cool on trays (biscuits will be crisp on cooling).
  • 3 sandwich biscuits with ice-cream. place in the freezer for 15-20 minutes to set. drizzle biscuits with melted chocolate to serve.
