Grilled Vegetable Sandwich

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 4 ciabatta rolls, split
  • 1 lemon, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 3 small zucchini or 3 small summer squash, cut lengthwise in 1/4 inch slices
  • 1 small red onion, cut into 1/4 inch slices
  • 2 ounces feta cheese, crumbled
  • fresh mint leaves, for garnish

Recipe

  • 1 lightly brush one tablespoon olive oil on the cut sides of the rolls and lemon halves; set aside.
  • 2 combine remaining oil and vinegar in a small bowl.
  • 3 brush a little of mixture on zucchini and onion, then season with salt and pepper.
  • 4 grill zucchini and onion, over medium heat, until tender, about 2 to 3 minutes per side.
  • 5 meanwhile toast rolls, cut side down, about 3 minutes.
  • 6 place vegetables on rolls, top with feta and mint, if using; drizzle with remaining vinegar and oil and squeezed lemon juice.
