Peanut Butter Panini With Raisins And Apples

Ingredients

  • Servings: 4
  • 1/4 cup golden raisin
  • 1/4 cup peanut butter
  • 2 tablespoons honey
  • 11 1/4 inches round low-fat whole grain waffles
  • 1 apple, cored and sliced into 1/8 inch thick pieces
  • 4 tablespoons raspberry all-fruit jam or 4 tablespoons strawberry all-fruit jam
  • 2 teaspoons unsalted butter

Recipe

  • 1 combine raisins, peanut butter and honey in small bowl; stir to blend. divide and spread over 4 waffles to cover and top each with about 5 apple slices.
  • 2 spread 1 teaspoons jam on each four remaining waffles; place jam side down on peanut butter topped waffles.
  • 3 heat 1 tsp butter in large skillet over medium-high heat. add waffle sandwiches and reduce heat to medium-low heat. place another skillet over evenly on waffles.
  • 4 cook for 1 1/2 minutes.
  • 5 flip panini; add remaining 1 teaspoons butter to skillet and slide panini around skillet to coat with butter.
  • 6 replace skillet on top and cook one more minute or until lightly browned.
  • 7 cut and serve with remaining apple slices.
