French Dips With Swiss

Ingredients
- Servings: 4
- 1 tablespoon butter or 1 tablespoon margarine
- 1 small onion, sliced into rings
- 1/2 small bell pepper, thinly sliced (optional)
- 24 slices deli sliced roast beef
- 8 slices deli sliced swiss cheese
- 4 french bread sandwich buns
- rich beef broth (for dipping)
Recipe
- 1 heat beef broth over low heat; keep warm.
- 2 melt butter in a small frying pan.
- 3 fry onion rings and optional bell pepper in butter until tender and slightly browned.
- 4 remove vegetables from the pan; keep warm.
- 5 add meat to the pan and heat throughly. (if there are any browned spots from the meat and vegetables left in the pan, you can deglaze the pan with a little bit of red wine and then add it to the broth for a tasty addition).
- 6 layer one slice of cheese, meat, veggies and another slice of cheese on french bread rolls.
- 7 cover with other half of roll.
- 8 place sandwiches back in pan over low heat, covered.
- 9 heat just until cheese is melted and bottom of rolls are toasted.
- 10 serve with warmed broth for dipping.
