Mile High Shredded Beef Sandwiches

Total Time: 7 hrs 20 mins Preparation Time: 20 mins Cook Time: 7 hrs

Ingredients

  • 1 (3 lb) chuck roast
  • 2 tablespoons oil
  • 1 cup chopped onion
  • 1/2 cup sliced celery
  • 2 cups beef broth
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 3/4 cup barbecue sauce
  • 4 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1 teaspoon dry mustard
  • 1 teaspoon chili powder
  • 3 drops tabasco sauce
  • 1 bay leaf
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 teaspoon worcestershire sauce

Recipe

  • 1 in a skillet, brown both sides of meat in oil.
  • 2 add onions, and celery and saute briefly. transfer to slow cooker.
  • 3 add broth.
  • 4 cover, and cook on low 6-8 hours, or until tender. remove meat from cooker, and cool.
  • 5 shred beef.
  • 6 remove vegetables from cooker, and drain, reserving 1 1/2 cups broth.
  • 7 combine vegetables, and meat.
  • 8 return shredded meat, and vegetables to cooker. add broth, and remaining ingredients and combine well.
  • 9 cover and cook on high for 1 hour, remove bay leaf.
  • 10 pile into 8 sandwich rolls, and serve.
