Lamb Slides (crockpot)

Ingredients
- 4 lbs lamb shoulder, trimmer of fat
- 6 garlic cloves, minced
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1/2 cup lime juice
- 1/2 cup orange juice
- 12 slices low-fat swiss cheese, halved (1/2 pound)
- 24 slicer rolls
- 3/4 lb low sodium ham, deli sliced
- 48 dill pickles
- 12 teaspoons mustard
Recipe
- 1 put lamb in lightly oiled crock pot. sprinkle with half of the garlic, cumin, and oregano. mix remainder of the spices (cumin - oregano) and mix with the juices and pour over all in the pot. cover and cook on low for 4-5 hours or until lamb is cooked through. transfer to a cutting board and break into pieces or shred with a fork. skim fat and reserve juices.
- 2 dived cheese among tops of rolls and broil until melted.
- 3 layer bottoms of rolls with ham and lamb and drizzle with juices and then layer with pickles,mustard and tops of rolls.
