Lamb Slides (crockpot)

Total Time: 5 hrs 15 mins Preparation Time: 15 mins Cook Time: 5 hrs

Ingredients

  • 4 lbs lamb shoulder, trimmer of fat
  • 6 garlic cloves, minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1/2 cup lime juice
  • 1/2 cup orange juice
  • 12 slices low-fat swiss cheese, halved (1/2 pound)
  • 24 slicer rolls
  • 3/4 lb low sodium ham, deli sliced
  • 48 dill pickles
  • 12 teaspoons mustard

Recipe

  • 1 put lamb in lightly oiled crock pot. sprinkle with half of the garlic, cumin, and oregano. mix remainder of the spices (cumin - oregano) and mix with the juices and pour over all in the pot. cover and cook on low for 4-5 hours or until lamb is cooked through. transfer to a cutting board and break into pieces or shred with a fork. skim fat and reserve juices.
  • 2 dived cheese among tops of rolls and broil until melted.
  • 3 layer bottoms of rolls with ham and lamb and drizzle with juices and then layer with pickles,mustard and tops of rolls.
