Sloppy Joe Biscuit Cups

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 10
  • 1 lb ground beef
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green pepper
  • 1/2 cup prepared barbecue sauce
  • 1/4 teaspoon salt
  • 1 (2 ounce) can refrigerated buttermilk biscuits
  • 5 (1 ounce) slices cheddar cheese, quartered

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 brown beef, celery, onion and bell pepper.
  • 3 drain.
  • 4 stir in bbq sauce and salt.
  • 5 simmer uncovered for 3 minutes.
  • 6 place (10) biscuit into each well of an ungreased muffin tin.
  • 7 press dough firmly onto bottoms and up sides of cups.
  • 8 spoon about 1/4 cup of beef mixture into each biscuit cup.
  • 9 bake 10 to 13 minutes or until edges of biscuits are golden brown.
  • 10 place 2 quarter slices of the cheese on top and return to oven just until cheese melts.
  • 11 let stand one minute.
  • 12 loosen edges and remove from pan.
  • 13 serve.
