Pinto Bean Sloppy Joes

Ingredients
- Servings: 6
- 1/2 tablespoon oil
- 1 medium onion, chopped fine
- 1/2 bell pepper, chopped fine
- 1 (16 ounce) can pinto beans or 1 (16 ounce) can red kidney beans, drained and rinsed
- 1/4 cup wheat germ
- 1 cup thick tomato sauce (i mixed a 6-oz can tomato sauce with enough water to make a cup)
- 1 tablespoon soy sauce or 1 tablespoon tamari
- 1 teaspoon chili powder (optional)
- 1 teaspoon paprika
- 1/2 teaspoon dried basil
- 6 hot dog buns
Recipe
- 1 heat oil and saute onion and bell pepper 3 to 4 minutes.
- 2 add remaining ingredients and bring to a simmer.
- 3 mash beans lightly with fork or potato masher.
- 4 simmer, loosely covered, 5 to 7 minutes or til preferred consistency, stirring occasionally.
- 5 serve on buns.
