Pinto Bean Sloppy Joes

Total Time: 32 mins Preparation Time: 15 mins Cook Time: 17 mins

Ingredients

  • Servings: 6
  • 1/2 tablespoon oil
  • 1 medium onion, chopped fine
  • 1/2 bell pepper, chopped fine
  • 1 (16 ounce) can pinto beans or 1 (16 ounce) can red kidney beans, drained and rinsed
  • 1/4 cup wheat germ
  • 1 cup thick tomato sauce (i mixed a 6-oz can tomato sauce with enough water to make a cup)
  • 1 tablespoon soy sauce or 1 tablespoon tamari
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried basil
  • 6 hot dog buns

Recipe

  • 1 heat oil and saute onion and bell pepper 3 to 4 minutes.
  • 2 add remaining ingredients and bring to a simmer.
  • 3 mash beans lightly with fork or potato masher.
  • 4 simmer, loosely covered, 5 to 7 minutes or til preferred consistency, stirring occasionally.
  • 5 serve on buns.
