Ingredients

- 4 flour tortillas
- 1 cup cooked brown rice
- 1/4 cup diced cucumber
- 1/4 cup chopped scallion
- 1 large tomato, chopped
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
Recipe
- 1 in a large bowl, combine all ingrediants and salt and pepper to taste.
- 2 mix well, cover and refridgerate for at least an hour.
- 3 divide mixture evenly among the tortillas, fold ends and roll up.
- 4 may be prepared ahead.
