Curried Chicken Salad

Ingredients

- 8 whole chicken breasts (defrosted & trimmed)
- 2 cups chicken broth
- 1 cup celery (diced small)
- 1 cup mayonnaise
- 1/4 cup plain yogurt
- 1/4 cup scallion (sliced very thinly)
- 2 tablespoons fresh lemon juice
- 1 teaspoon garlic powder
- 1 1/4 teaspoons salt
- 1/8 teaspoon pepper
- 1 tablespoon sugar
- 1/2 teaspoon paprika
- 1 teaspoon curry powder
Recipe
- 1 place chicken breasts in a single layer in a large saute pan and cover with chicken broth.
- 2 bring pan to a simmer, cover with foil and keep at a bare simmer for 15 minutes. turn off heat and let chicken breasts sit in broth for 10 more minutes. remove from broth and chill.
- 3 cut chicken breasts into cubes and combine it in a bowl with the rest of the ingredients.
- 4 mix well, cover, and chill.
