Sloppy Dude Rolls

Ingredients

- 2 tablespoons extra virgin olive oil
- 1 lb ground turkey or 1 lb ground beef
- 16 tomatillos, husks removed and rinsed thoroughly, coarsely chopped
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 jalapeno, seeded and chopped
- 1 lime, juice and zest of, separated
- 1 tablespoon ground cumin
- salt and black pepper
- 1 cup chicken stock
- 2 small ripe hass avocadoes, pitted and scooped from skins
- 4 kaiser rolls or 4 other type of crusty rolls
- 1/2 red onion, very thinly sliced
- 2 small vine tomatoes or 2 small plum tomatoes, sliced
- tortilla chips, if desired, as an accompaniment
Recipe
- 1 preheat the oven broiler.
- 2 place a large skillet over medium-high heat and heat the olive oil. when it's hot, add the ground turkey or beef, breaking it up into small bits; saute until cooked through.
- 3 meanwhile, place tomatillos in a food processor and pulse to a coarse puree. add the tomatillos to the browned meat along with the onions, garlic and jalapeno. season with the lime zest, cumin, salt and pepper. cook for 5 minutes, then add the stock and simmer for 5 minutes more.
- 4 while everything is simmering, use a fork to mash the avocados with the lime juice.
- 5 split and toast the rolls under the broiler until light brown, 2 minutes.
- 6 to assemble, spoon some of the meat filling onto the bottom of each bun. top with red onion and tomato slices, and spread mashed avocado on the bun top. serve with tortilla chips, if desired.
