Simple Tomato & Avocado Crostini

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1 cup plum tomato, seeded and diced
  • 1/2 cup avocado, pitted and diced
  • 2 tablespoons cilantro, fresh chopped
  • 1/2 lime, juiced
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove
  • salt
  • pepper
  • 1 baguette, sliced and toasted

Recipe

  • 1 rub garlic clove on each slice of hot baguette. this will add a perfect light garlic essence without being "in your face" or oily. this technique is actually one of my favorites to use with crostinis or toasted sandwiches.
  • 2 mix together tomato, avocado, cilantro, lime juice, and olive oil. season to taste with salt and pepper.
  • 3 scoop spoonfuls of the tomato/avocado mixture onto the garlic rubbed crostinis.
  • 4 serve and enjoy!
