Portabella Mushroom Sandwich

Ingredients
- Servings: 4
- 1 cup butter
- 5 sun-dried tomatoes
- 1 red chili pepper
- 1 garlic clove
- 1 sprig thyme leaves
- 4 large portabella mushrooms, only caps
- sourdough bread
- 2 tablespoons spicy brown mustard
- 1 bunch watercress
- fresh ground black pepper
- fresh ground sea salt
Recipe
- 1 preheat oven 400 degrees f.
- 2 de-seed chile.
- 3 chop up tomatoes, chile, garlic and thyme leaves.
- 4 mix with butter.
- 5 season to taste with salt/pepper.
- 6 spoon mix into mushroom caps.
- 7 bake for 15 minutes.
- 8 spread mustard on sourdough bread.
- 9 add watercress on top of mustard.
- 10 place baked mushroom on watercress.
- 11 cover with bread.
