Portabella Mushroom Sandwich

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup butter
  • 5 sun-dried tomatoes
  • 1 red chili pepper
  • 1 garlic clove
  • 1 sprig thyme leaves
  • 4 large portabella mushrooms, only caps
  • sourdough bread
  • 2 tablespoons spicy brown mustard
  • 1 bunch watercress
  • fresh ground black pepper
  • fresh ground sea salt

Recipe

  • 1 preheat oven 400 degrees f.
  • 2 de-seed chile.
  • 3 chop up tomatoes, chile, garlic and thyme leaves.
  • 4 mix with butter.
  • 5 season to taste with salt/pepper.
  • 6 spoon mix into mushroom caps.
  • 7 bake for 15 minutes.
  • 8 spread mustard on sourdough bread.
  • 9 add watercress on top of mustard.
  • 10 place baked mushroom on watercress.
  • 11 cover with bread.
