Falafel Patty Melt

Ingredients

- 1/2 cup frozen peas
- 1 (16 ounce) can garbanzo beans, rinsed & drained
- 1 medium carrot, shredded
- 2 tablespoons flour
- 2 tablespoons olive oil
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 8 slices havarti with dill
- 4 pita bread
Recipe
- 1 preheat oven to 400°f place peas in a 1-qt microwave safe dish. cover and cook on high for 2 minutes.
- 2 in food processor, puree garbanzo beans, carrot, flour, 1 t olive oil, pepper and salt. stir in peas. form mixture into 8 patties.
- 3 heat remaining oil in a large skillet over med-high. add patties. cook 2-3 minutes per side or until browned and heated through.
- 4 meanwhile, place pitas on baking sheet. place two slices of cheese atop each pita. bake 5 minutes, or until cheese is melted. place 2 patties on each pita; fold over, and cut in half.
