Falafel Patty Melt

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/2 cup frozen peas
  • 1 (16 ounce) can garbanzo beans, rinsed & drained
  • 1 medium carrot, shredded
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 8 slices havarti with dill
  • 4 pita bread

Recipe

  • 1 preheat oven to 400°f place peas in a 1-qt microwave safe dish. cover and cook on high for 2 minutes.
  • 2 in food processor, puree garbanzo beans, carrot, flour, 1 t olive oil, pepper and salt. stir in peas. form mixture into 8 patties.
  • 3 heat remaining oil in a large skillet over med-high. add patties. cook 2-3 minutes per side or until browned and heated through.
  • 4 meanwhile, place pitas on baking sheet. place two slices of cheese atop each pita. bake 5 minutes, or until cheese is melted. place 2 patties on each pita; fold over, and cut in half.
