Chicpea Salad Sandwiches

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 2 (12 ounce) cans chickpeas
  • 2 stalks celery
  • 2 onions, quartered
  • 2 cups celery, chopped
  • 3 1/2-4 cups mayonnaise (depending on how wet you like it)
  • 4 tablespoons lemon juice
  • 1 pinch salt and pepper
  • 4 tablespoons fresh parsley, chooped
  • 1 teaspoon dill seed
  • 16 slices whole wheat bread

Recipe

  • 1 smash the chickpeas to how thin you want the spread.
  • 2 mix in the celery stalk, onion, mayonnaise, salt, pepper, parsley, dill seed, chopped celery, and lemon juice into the spread. make sure the spread is mixed well.
  • 3 spread the spread onto a slice of bread and then place another slice of bread ontop to create a sandwich.
  • 4 serve and enjoy!
